The mod for removing the top catalytic converter on the MK6 VW GTI's is fairly easy to do and is show in this great video by Last Humans Garage. I found it was relatively easy to do and my car has not thrown any codes. There is a certain configuration of the oxygen sensors that is required for this to mod to work and my car has that config.

As shown in the following pics there is an oxy sensor at the very top of the downpipe just after the turbo but before the first cat.
The second oxy sensor is after the second cat.
